One day I was craving the classic oreo, but due to the list of harmful ingredients found in regular oreo cookies, I decided to whip up a raw vegan version of the classic cookie.
These are soft, fudgey cookies with a creamy, sweet frosted center that can be whipped up in no time. Reminiscent of oreo cakesters, these cookies are delectable and dunkable (oreos dipped in fresh almond milk, anyone?)
Vegan Oreos
3/4 cup almond flour
1/4 cup oat flour (just blend oats in a high-power blender)
1/4 cup cocoa powder
1/4 cup organic sugar
1 tsp. sea salt
1 tbs. maple syrup
4 to 5 tbs almond milk
Frosting:
1/4 cup Earth Balance vegan buttery spread
1 and 1/3 cup powdered organic sugar
1/2 tsp. almond milk
1/4 tsp. vanilla
dash of sea salt
1 drop of lemon juice
directions: combine first five ingredients in a mixing bowl and stir until thoroughly combined, then add last two ingredients to the mix and stir until mixture starts to form a moist dough that sticks together. Add some water if needed.
Next, flatten dough onto parchment paper and cut out circled with a cookie cutter. Transfer to a plate with parchment paper on top and freeze for around 20 minutes. Meanwhile, combine frosting ingredients in food processor or mix by hand. After the frosting is made, take cookies out of freezer, spread half of the cookies with frosting, and top them with the other half of cookies. Now it's time to savor these delicious treats because there are no additional cooking or difficult baking methods.
